Recently, a customer messaged us on Facebook to ask if we carried organic condensed milk or condensed milk sweetened with organic sugar. He was looking at baking some healthy granola bars for the upcoming holiday season. We don’t carry anything like this at the moment and are looking into it for him, but the question prompted us to look for a suitable replacement. Coconut milk came to mind and after a quick Google search, an awesome gem of a recipe was found, courtesy of savorylotus.com. Mix up a batch easily with full fat coconut milk or cream (available at Olives) and some raw honey or maple syrup. Read on for the full recipe.
Sweetened Condensed Coconut Milk (a dairy free alternative)
(Makes about 10 ounces)
1 can of FULL fat coconut milk (Blue Monkey & Nature's Forest available at Olives)
1/4 cup RAW honey or REAL maple syrup
In a small saucepan, bring coconut milk to a gentle boil. Whisk in honey (or sweetener of choice). Allow to actively simmer on medium heat for 25-30 minutes, stirring OFTEN. Mixture will thicken slightly, reduce by about a 1/3, and darken just a titch. Allow to cool completely then store in glass container for up to 5-7 days.
