Can't wait for those bright yellow flowers to bloom? If you're missing dandelions in your life, never fear, we have fresh dandelion greens at Olives! Some know this plant as a weed, but to botanists and herbalists it is also 'a hard herbacious perennial' with edible roots, stems, leaves and flowers! As a liver and digestive tonic, it helps to cleanse the liver, gallblader, kidney and bladder. It is also used as a diuretic.
The fresh leaves can be used in juicing. Roll 4 - 6 leaves into a ball and feed through the tube along with other ingredients - or you can substitute or add them to your greens smoothie. My favourite combination right now is R.W. Knudsen Just Cranberry Juice, an orange, and a bunch of dandelion leaves. This mix of tart and sweet is energizing in the morning!
Dandelion Slam Dunk*
1/2 cup Dandelion leaves
1/4 cabbage, cut to fit tube
1 1/2 piece fresh ginger
10 spears asparagus
1 handful fresh spinach leaves
1 handful of fresh dandelion leaves
drop of maple syrup (optional - whisk in after juicing)
